Ingredients

+ 1 scoop Juice Plus+ Vanilla Complete
200g ground almonds
180g flour (or rice flour as a gluten-free option)
Extra flour for dusting
95ml maple syrup
2 tbsp ground ginger
1 tsp cinnamon
1 tbsp coconut oil
1 tbsp chia seeds
Icing to decorate

Mixing bowl
Wooden spoon
Rolling pin
Scale
Sieve to sift the flour
Baking tray
Baking paper
Cookie cutters 

  

Directions  

  1. Preheat the oven to 180°C.
  2. Place baking paper on a couple of baking trays.
  3. Sift the flour to remove any lumps, measure, and place all ingredients in a bowl. Add 100ml water and mix until a sticky dough forms.
  4. Sprinkle extra flour on your working surface and rolling pin.
  5. Roll out the dough until it is smooth and about 1-2 cm thick.
  6. Cut out shapes with your cookie cutter and place onto the baking tray.
  7. Bake for about 15 minutes. Check and leave in longer if needed.
  8. Once finished, take the cookies out and let them cool on the baking tray.
  9. Once cooled, decorate with icing and let the icing set.
